Neisson Élevé Sous Bois Rhum
Neisson, one of the smallest and cultiest producers of Rhum Agricole (which in itself is among the smallest and cultiest spirits) has been around since 1932 and still traditionally produces classic Agricole Rum in tiny quantities.
Literally meaning "raised under wood", Élevé Sous Bois is roughly the equivalent of Reposado Tequila for Rhum Agricole. The spirit has been "rested" in wood for a brief time, so that the wood has imparted flavor without totally transforming the spirit. The raw character of the distillate is still allowed to shine through. Neisson's "Élevé" is rested for 18 months in 20,000 liter casks, which softens the rum and only slightly imparts the character of American and French oak. The result is hints of orange citrus, vanilla, caramel, nutmeg, and, while still retaining a bit of those grassy/vegetal notes. Bottled at 50% abv.
