Suze, a french aperitif staple since 1889, is these days one of the most called for bitter liqueurs in the creation of a White Negroni. The irony there is that it's decidedly, proudly, technicolor yellow, imbuing the drink with an almost lemon-lime Gatorade hue. It has been immortalized by Picasso, and in recent years was one of the first non-red bitters on the US market, perhaps explaining its ubiquity. But it's a classic for a reason, and bitter-hounds love it's pure gentian, herbal quality. It has a distinct aroma of wild gentian harvested from the Alps. This complex, aromatic aperitif has notes of bittersweet herbs and subtle accents of vanilla, candied orange and spice and a delicately bitter finish.
