Saison PX Sherry Cask Caribbean Rum

This special expression from Saison takes two five year old rums from Barbados and Trinidad and brings them to France for a year of further aging in French Oak barrels that previously held Cognac, and then a further three months in fresh, first fill Pedro Ximenez sherry barrels. The result is a complex, rich, and layered rum that calls more for sipping or spirit forward cocktails like an old fashioned than it does a tiki drink or Daiquiri. 

The nose gives away the sherry influence right away, with dark fruit, raisins, leather, and winey notes dominating. On the palate, there is certainly more of that, but also maple syrup, red currant, chocolate, and a tingle of spice on the finish. Bottled at 42% abv.
