This limited release sees Penelope take three separate recipes of four grain bourbon (with an end result of 75% corn, 15% wheat, 7% rye, and 3% malted barley) and after 4-5.5 years of aging separately, finish them together with French oak staves from Tonnellerie Radoux of France.
Sweet candied cream and floral notes with hints of crème brûlée greet you on the nose. The palate follows with sweet vanilla and viscous cream with some savory oak notes. That creamy sweetness transitions from the forward notes and into the body, herbal, floral and creamy. The finish lingers on vanilla and a touch of toasted oak. Bottled at 52% abv.
