This is one we are very excited about - a fantastic single cask from Guyana's Demerara Distillers, which is a veritable living museum of rum history, housing some of the rum world's most unique and historic stills, and still putting them to good, delicious use. This particular 10 year old cask was distilled on their "Diamond" pot still, so named for its historic use at Guyana's Diamond Estate, before being moved to Demerara Distillers. The profile is amazingly easy to dive right into for a cask strength (55%), pot still rum, balancing the classic dark, molassesy, almost smoky Demerara signature with brighter tropical fruit notes that one more associates with Jamaican rum. The nose opens with buttercream cake frosting alongside golden raisins, gingerbread snaps, mango, white peach, and a hint of basil. The full strength is present, but only as a deep rich element, showing no harshness. That follows on the palate, where the viscous texture carries rich vanilla, berry compote, cardamom, nutmeg, and burnt sugar. The finish lets go of some of the overt sweetness and lingers on a nicely bracing grapefruit zest, oak spice, and a soft savory note, like an herb rub on a holiday turkey.
