First introduced in 1838 as a more accessible version of Green Chartreuse, the Yellow version uses a base of grape distillate and is bottled at a (relatively) lower 86 proof. Like its green sibling, there are no artificial flavors or colors (saffron provides the pretty yellow hue). The aroma is bright, mild and lime-lollipop sweet, with pine, mint, honey, citrus, and herbs. On the palate, honey, mint, citrus, and pine blend beautifully before a touch of herbal bitterness on the finish. Thick, syrupy and tongue-coating, this is different from Green Chartreuse but just as tasty.
