The family-owned distillery, Fundo y Bodega San Martin is located in the lca valley of Peru, the southern region of the country where most of the grapes designated for the production of pisco is grow.
This expression is a mosto verde pisco which means it is made from musts that aren't fully fermented, such that the yeasts haven't completely converted all of the sugars from the grape juice into wine. This results in mosto verdes having a more silky texture and are more aromatic.
This pisco is made from the 'Mollar' varietal, which is a red grape that is light and fruity like Merlot. A favorite in a pisco sour cocktail!
