Sonbi Gin
Sŏnbi Gin is a London Dry style gin with a Korean twist that combines fresh and dried botanicals to create a balanced flavor. Each botanical is treated differently during the maceration process to tease out the unique flavors of each ingredient. The gin is then distilled through a continuous copper column still and rested to allow the flavors to blend before being slowly taken down to bottle proof.
The botanicals are a blend of familiar and traditional ingredients in classic London Dry gins and some are more unusual ingredients such as pine leaves, Chinese licorice, chrysanthemum and green cardamom. Glutinous rice is also used which gives Sŏnbi its luxurious and rich mouthfeel. The result is a floral, citrusy and peppery gin with some savory undertones. Just like Korea’s most popular spirit, Soju, Sŏnbi is perfect when accompanied with Korean cuisine or mixed into classic gin cocktails.
