Bimini Coconut Gin
Unlike many flavored spirits, Bimini Coconut does not contain any flavor extracts. Instead, the distillery uses organic Fair Trade Certified Extra Virgin coconut oil in a process know as “fat washing.” The oil is heated to a liquid state and combined with Bimini's original gin to infuse it with pure coconut flavor. After the infusion has completed, the mixture is chilled until the oils solidify and can be strained back out. The result is a subtle, natural coconut aroma and flavor in perfect harmony with the other botanicals: Juniper Berries, Coriander Seeds, Mt. Hood Hops, Grapefruit Peel, Aromatic Barley Malt, Chamomile, and Orris Root. Bottled at 47% abv.
Try it in a Bimini Special, a drink described in Ernest Hemingway's Islands in the Stream as "a tall drink made of gin, lime juice, green coconut water, and chipped ice with just enough Angostura bitters to give it a rusty, rose color."
