Barton 1792 Distillery has launched a new line of bourbons named in honor of Thomas S. Moore, the man who originally built the Barton distillery back in 1889. The trick with this lineup is that they will all feature extended finishing in a variety of cask types. Each of these whiskeys starts with the 1792 high-rye bourbon recipe and completes its first round of aging in new charred oak barrels. They then go into their secondary casks for a truly “extended” finishing period that ranges for 2 to 5 additional years — a lifetime in bourbon finishing.
There's no question this is still bourbon, but the Cabernet does have quite the influence. Distinct grape mixes in with the roasted cereal components, imparting a flavor reminiscent of a PB & J-filled cookie with vanilla frosting and spices. The jammy sweetness includes some herbal wintergreen and sage notes, but also a good deal of tartness that keeps things from getting too sweet. It's a dessert bourbon for sure, but it would also make a seriously decadent base for a Manhattan.
