Distilled on Mare Island (much like Monster Island, it's actually a penninsula!) in Vallejo, California from a mash bill of 75% corn, 21% rye, and 4% malted barley, Savage and Cooke Bourbon is matured for at least three years in char #3 new American oak barrels before transferring to ex-Cabernet Sauvignon barrels for about 2 months of finishing. The finished bourbon is bottled at 100 proof. The nose offers scents of candied orange peel, wildflower honey, caramel, and oak. On the palate, sweet caramel and honey are joined by dark red fruits and a touch of leather. The red fruit notes linger through a medium finish also featuring some toasted oak and light caramel.
