Pinhook Vertical Series 8 Year "Bourbon War" Bourbon

Pinhook's innovative Vertical Series allows drinkers to follow a group of barrels as they age from 4 to 12 years, tasting how they change over time.  Distilled at MGP in Indiana from a mash bill of 75% corn, 20.5% rye and 4.5% malted barley, these barrels were aged in Kentucky for eight years before blending and bottling without chill filtration at 114.6 proof.  The nose presents sweet scents reminiscent of waffles covered in maple syrup along with cinnamon spice and cherry.  On the palate, cinnamon and rye spice flavors pop first, followed by brown sugar and oak.  The palate is slightly dry with oak, cinnamon, leather, and some peppery rye spice.
