Crushed blackberries, honey, bourbon—here’s a summery treatment for a wintery spirit, so why not whip up a round to serve alongside a beachside bonfire? Use this technique for making honey syrup, you’ll be forever armed with a more interesting—and quicker—alternative to simple syrup.
Instructions
In a cocktail shaker, muddle the blackberries with the honey syrup. Add the bourbon, lemon juice, and plenty of ice. Shake vigorously, then pour through a fine-mesh strainer into a tumbler or coupe. With muddled fruit or herb cocktails, a fine mesh strainer will sift out the pulp, seeds, and other bits. Garnish with a ripe blackberry or two.
Honey Syrup
Combine equal parts honey and water in a small, lidded jar. Shake vigorously until combined. Kept in an airtight container, the honey syrup will keep for weeks in the refrigerator. Honey syrup is also a great cocktail staple to keep handy, great with gin and lemon juice as well.
