Redwood Empire Grizzly Beast Bourbon

Made entirely in California, Batch 5 of Redwood Empire's yearly Bottled-In-Bond Bourbon was distilled from a (locally sourced) mash of 67% corn, 17% rye, 10% wheat and 6% malted barley and aged for five years in the temperate Northern California climate before bottling-in-bond at 100 proof.

The nose is immediately striking, with sharp rye spice, black pepper, and oak leading the charge, followed by notes of wild cherry, caramel, and a touch of leather. The palate is equally robust, with a peppery bite that gradually reveals layers of cinnamon, vanilla, and charred wood, balanced by subtle corn sweetness. The finish is long and warming, with lingering spice and oak.
