Produced by Master Mezcalaro Adrian Bautista in the Town of Rio de Ejutla in Oaxaca, this unique Arroqueno was distilled using a refrescadera* still. Distilled from agave harvested at 8-15 years old, cooked in an earthen pit oven, and crushed with a traditional tahona, this batch of Arroqueno was bottled at 94 proof. The nose opens with scents of wet stone and wood ash along with notes of citrus, green herbs, and roasted agave. The palate leans into sweetness with roasted agave, a touch of caramel, and stewed fruits giving way to minerality and a touch of smoke.
*This modified copper pot still includes a cooled plate on top that recondenses part of the spirit vapor, which is then heated to vaporization again. This constant reflux mimics the effects of double distillation in a single pass, leading to a lighter, fruit-forward style
